The Gotham Steel Pro Chef line is tri-ply clad stainless steel, so it actually haslessaluminum than the other lines. (Stainless steel is a terrible heat conductor.) The encapsulated base makes up for this somewhat, giving it roughly similar heating properties to the other Gotham Steel lines. However, it’s important to note that many reviewers complained that some of the Gotham Steel lines did not work with their induction cooktops. We suspect that the problem is that the smaller pans are too lightweight for the cooktop to detect them, or possibly that there isn’t enough magnetic stainless on them to work properly. We haven’t tested all of these brands, but we’re pretty certain that they’re all close in quality and performance. We see this in several of the products we review, including induction burners, sous vide immersion circulators, and vacuum sealers.
They are certainly usable–but you will find better, more even, more stable heating at only slightly higher price points. It’s one of the best brands you can find at this price point. However, don’t expect stellar performance or durability from this brand. There are a few issues, gotham steel cookware sets such as water getting stuck in the lids. And again, the light weight, which you may like, but which isn’t going to provide the best heating properties.
