Properly Assemble a Weber Charcoal Grill That Won’t Collapse

Energy at the food level reduces rapidly as the coals move away, so this is a very effective temperature controller. And if you want that great dark mahogany steakhouse sear, crank the coals to right weber genesis 2 below your steak. This arrangement is better than the Santa Maria-style grill where the food moves up and down and the coals are stationary because the head room above the food isn’t reduced.

In the case of kettle models, we arrange coals in a semicircle around the grill’s inner wall. The charcoal briquettes form a line two coals wide and two coals deep. On cart-style grills, we modify the snake to run in right angles to match their rectangular-shaped fireboxes. Napoleon delivered excellent cooking results in our ribs test.

“My father knew that one of the best ways to bring families together was through a shared meal enjoyed in the great outdoors,” his son Jim Stephen, now chairman of Weber-Stephen Products, once said. I’ll continue to use my gas grill for weeknight dinners, but turn to the Weber when hosting things that I want to feel more like an event. In doing so, hopefully my kids will absorb the same Dad-imbued, charcoal-infused summertime impressions that waft through one’s memory for a lifetime. Whatever grill you choose, do not rely on the built-in dial thermometers, which can be off by 50°F to 100°F (10-38°C). These dials are usually located in the lid, not down on the grill surface where the food is—and you’re not eating the lid, so its temperature is irrelevant.

It’s a fun rewarding experience, though to be perfectly honest I now never smoke on this grill because I tend to always smoke on my Kamado Joes. The bowl and lid are protected against burn-through and rust-through for 10 years. The one-touch cleaning system comes with a 5-year warranty, also covering burn-through and rust-through, plus you get 5 years on the plastic bits, not including fading or discoloring. It’s a relatively large grill, which means it’s a versatile grill.

While this grill does come with an included cart, which added to setup time, we also found the instructions hard to follow, and the amount of hardware included felt a bit overwhelming. If you’re going to purchase this grill, then we’d advise looking into having your local hardware store build and deliver it to you. We measured the temperature of the grill surface, as well as the internal temperature of the chicken, with an external thermometer to ensure that any built-in temperate gauges were accurate. For the most part, the built-in thermometers were accurate, with the exception of the Cuisinart gauge, which barely registered any temperature throughout our testing process. With grilling, the ability to cook on direct heat means that your food will be ready quickly. However, unless you’re closely watching the grill at all times, your food can easily burn or overcook.

Sam Sifton, editor for the Cooking section of The New York Times , joined us for these tests. These are just a small selection of things that I love to make on my weber charcoal grill. This grill makes me happy—it looks like a classic Weber grill (the core design—inspired by nautical buoys—is timeless) but has a few updates that earn big points for user-friendliness. The 26-inch Original Kettle® Premium is the charcoal grill you want at your next party. It’s large enough to grill an entire dinner during the week, or a bunch of burgers at your next barbecue. With premium features, such as a hinged cooking grate for easily adding charcoal while grilling, and the One-Touch™ cleaning system with high-capacity ash catcher.

Start by lighting your coals and letting your grill heat up for about 10 minutes. This should heat the grates enough that any crusted-on food can be easily removed with a grill brush. After you clean the grates, oil them using a paper towel dipped in oil and held in tongs. Finally, make sure to empty your ashes, and keep that grill covered when not in use. The 357 PRO wouldn’t be a Hasty-Bake without their classic adjustable-height charcoal tray that can be raised and lowered with a crank. The coals can move from 14.5 inches to 2.5 inches away from the cooking surface for serious direct infrared searing, a lot like a classic Santa Maria-style grill.
