If you don’t want to dirty your hands, you can use a pair of kitchen tongs to handle the paper towels. A high lip runs around three sides, and a grease trough on the front of the griddle catches grease to reduce runoff and flare-ups.
This spring/summer, I’ve made up for that by using it as often as I can cooking everything from pancakes to stir fry. I love it so much that I have yet to dust off my regular gas grill. It’s just a joy to cook on, and the versatility of what you can cook on it is endless.
