The pan is not as deep as the Weber Premium’s pan, so it requires more frequent cleaning, which can only be done when the grill is entirely cooled off. The lid sets this grill apart from a traditional Weber kettle, which features an unattached kettle top. We enjoyed the ease of being able to hinge open the lid on the Blackjack for a quick flip of our meat during our tests.

If you want a charcoal grill to last decades, then this is the brand for you. Depending on the size of your bird, total cooking time should be between weber charcoal grill 60 and 90 minutes. If you prefer meat that’s more well done, you can extend the cooking time, or sear and finish cooking in an oven. They’re bulkier, the assembly is more involved and you’ll likely need more fuel to keep the larger space at a high temperature. Our results, however, were almost as good as with the kettle-style Weber, so if you’re interested in a cart-style charcoal BBQ, this is your best bet.

This style of cooking requires strict temperature control over a period of multiple hours. Ideally, a quality charcoal grill will keep its fire humming along close to 225 degrees F for as long as possible. Every grill we tested had a hinged grate, a nice feature that lets you add or adjust the coals without lifting the whole grate off. We preferred the Weber and Napoleon designs, which each have portable bbq a pair of hinged sections, on opposite edges of the grate, that let you directly access the entire bed of charcoal below. We noticed no performance differences, and all worked well, with no notable sticking of the items we cooked. The idea is that the fire spreads slowly from the center of the coal bed outward. Without fail, there comes a point when all of my coals are burning at once. Most grills come with analog hood thermometers, if they have one at all.

They control airflow through the grill, allowing you to easily manage the cooking temperatures of your Kettle. Simple construction means there aren’t too many parts to assemble or too many features to handle while cooking. A vent on the lid controls airflow and a well-designed ash tray beneath the Weber grill facilitates easy cleanup.

We lit the charcoal inside the chimney, letting it burn until the smoke dissipated and the coals began to turn grayish-white, then put the charcoal into the grill. After the grill was heated up for 10 minutes, the steaks were ready to hit the grill grate. The PK Grills company has recognized the need for an update, and in February 2017, it launched the PK360, a bigger, slicker design with front access vents and a better lid attachment. It still has no significant backstop for the grates, however, and no bottom tray for catching ash—which means it just kind of pours out on the ground.

The main difference between the standard and more premium models is a home for the lid; the premium model (about $10 more expensive) has a hinge that holds the lid when not in use. You can create an indirect heat zone by placing briquettes, or lump charcoal if you prefer, only on one side of the charcoal grate. You leave the other side empty then cook food above the cool spot. The trouble is that it’s tricky to control the grill’s heat level this way. It’s harder to do that with a Weber Kettle, at least without lots of practice.

Those designs offer attractive versatility, but they’re also expensive—$350 at minimum, and the most popular and best-regarded styles run twice that or more. For those new to cooking outdoors, the Weber makes it easy to learn to grill over a flame; you’ll look like an old hand in no time. But even if you have a gas grill or a pellet smoker , sometimes the charcoal option is simply superior. Once you factor in price, performance, and design, the Weber is the heavy hitter in the arena of charcoal grills. To clean the grates, build a fire, heat up the grill, and then take a bristle-free wire brush (metal bristles can fall out and end up in your food, and you don’t want that) and scrape. Every few cooks, I like to use a Shop-Vac to remove any greasy ashes stuck in the bottom of the grill.
