Aluminum is a great material for high heat cooking as it heats up really fast and retains the temperature for long. Probably one of the most frustrating things about kitchenware sets is putting the wrong lid on the wrong cuisinart knife pot. They are cool-touch and hollow inside for better cooking performance. The 2.8 mm thickness is perfect for longer heat retention. As they have even heat distribution, you don’t get any burn spots or pan warping.
It’s flat, so easier to stabilize with your arm rather than just your hand. The pan body is a little on the thin side and the pans are very light (the 11-inch skillet weighs just 1.6 lbs, which is very light). Finally, Gotham Steel makes it sound as if the titanium ceramic coating is indestructible. You might also consider not putting them in an oven set higher than about 300F. Some owners have been disappointed by the fact that these pans are not actually solid copper.
