In what we’ve found to be the most differentiating of our cooking tests, the saute test; the DUO Nova performed wonderfully. It got hot enough to easily brown eve hearty veggies like carrots and made quick work of diced onions. We believe this ability is crucial; to effectively saute right in the pot vastly increases the number of meals you can make with only one dish to clean at the end. For the most part, we found the differences in cooking abilities to be minor between the models in our fleet. That being said, we thoroughly enjoyed the food made by the DUO Nova, with it earning superlatives in most of our cooking tests. While it isn’t a budget appliance, this Instant Pot is a great price when you take into account all the different uses and the other appliances it can replace.
It also has an updated steam release valve and a progress indicator to show when the Instant Pot is coming up to pressure, during cooking, and when it’s finished. Typically, pressure cookers are not known for their attractive design, but this looks pretty sleek in a stainless steel finish. If you’re a fan of the ‘set it and forget it’ style of cooking, the handy keep warm function means your food won’t go cold if you do actually forget about it. The delay start button allows you to postpone cooking for up to 24 hours, but be sure not to leave anything perishable in the pot if you’re using this function. It comes with a steam rack, but this is only really useful for larger foods, smaller vegetables will fall straight through the rack into the water below which is frustrating. Page 24Pressure Control Features Remove the Float Valve by pulling the Float Valve Silicone Cap off the Float Valve pipe and removing the float valve from top of lid. Reinstall the Float Valve by inserting it pipe-first into float valve hole in the top of the lid. Hold it in that position while firmly pressing the silicone cap on to the valve pipe protruding from the underside of the lid. Do not attempt to operate the pressure cooker without the float valve or silicone cap properly installed in the cooker lid. Steam Release Valve The Steam Release Valve opens to allow the release of pressure within the cooker when the Quick Release Button is pressed. The Steam Release Valve will also open automatically to regulate and maintain optimal pressure while cooking.
