Bandana’s Bar-B-Q is Southern Style – seasoned with a dry rub and cooked sauceless, then hand-cut to order straight from the smoker. Home-cooked seasoned potato chips, served w/ a generous portion of chunky bleu cheese dressing. Smoked sausage, cheddar, pepper-jack, pickles, pepperoncinis, honey mustard sauce, served with crackers.

Hickory is the primary wood used for smoking in Kansas City, while the sauces are typically tomato based with sweet, spicy, and tangy flavors. The Barbeque Exchange in downtown Gordonsville, VA features hickory-smoked and slow-roasted pork shoulders and spareribs. The meats are dry cured with secret ingredient rubs and then cooked weber charcoal grill in our specialized wood-burning cooker. Pit beef prevails in Maryland and is often enjoyed at large outdoor “bull roasts”, which are commonly fundraising events for clubs and associations. Maryland-style pit beef is not the product of barbecue cookery in the strictest sense; the meat is not smoked but grilled over a high heat.
