Digging deeper, gone are the old tube burners, replaced by tapered shape stainless steel burners with heat deflectors that should provide even heat across the entire cooking space. The new burners look good, giving a tidy and quality feel to the bowels of the grill. But is isn’t just the addition of the extra burner in this grill that makes it both new and an excellent choice. The entire cooking system has been redesigned, most notably, the burners with what they call the GS4 cooking system. In the past, burners on a Weber gas grill were the typical stainless steel tubular burners. What this means is that the fire shots directly up into the “flavorizer” bars and are tapered to provide an even heat front to back.
Indirect cooking, where food is placed off a direct flame, was very good. This Special Edition Genesis offers upgraded 9mm Stainless Steel cooking grates and a grill light. The thicker 9mm grates will last longer and give you those perfect sear marks you get from a steak house. The included motion-activated grill light is great for those nighttime grilling sessions and to easily see the temperature gauge. Heat was fairly well-distributed across the cooking surface and the temperature range was very good, but you’ll need a bit more than 10 minutes of preheating to get it nice and hot. The Genesis II’s most obvious design innovation—and our favorite by far—is the externally mounted propane tank. Instead of having to wrestle the tank into and out of a cramped cabinet beneath the grill, you hang it on easily accessed mounts on the left side of the grill’s support frame. Overall, the cooking tests were far more important to us; you assemble a grill only once. But poor instructions can make assembly slow, frustrating, and full of retraced steps. Same for assembly that requires lots of screws and bolts, or screws and bolts of multiple sizes.
The Weber Genesis II E-210 offers 380 sq inch primary cooking space plus the 114 sq inch added by the warming rack. The Spirit offers 360 square inches with a 90 square inch warming rack. Among the competition in our 2017 test, the Napoleon model in particular had noticeable cool spots toward the front of its grates. To a degree, all grills suffer this problem, because the burners don’t extend all the way to the front of the firebox, but the Spirit offered the most consistent heating across the entire grate surface. After 10 minutes, the burgers at the rear were medium-well and those at the front were medium-rare to medium . On the Napoleon grill, on the other hand, some of the front burgers were nearly raw in the center, while the rear burgers were well-done.
Simply put, the pressure inside the burner is the same all the way through, so the flames have the exact same pressure through every port. This gives the Genesis, one of the most even heats of any gas grill on the market. Charcoal grills are much cheaper, however, and can burn hotter than gas grills for a better sear.
